So, this is one of those weeks where I’m sort of completely off on everything. Between Mother’s Day, Captain America (which we’ll talk about later), going into the second week of three weeks of testing at school, the weather, etc…etc…etc….
My life is just kind of….off. So, meal planning did not really happen for this week. Like, at all.
I was just not going to post and pretend like this week wasn’t happening, but a girl still has to eat. Luckily we have enough leftover and in the pantry that no one will starve or anything, but it just means I’m being a bit more creative this week than prior weeks. And probably also a bit less healthy. But next week will be better! Hopefully.
My tentative plan after my kitchen raid last night is:
- Special K Flatbreads
- Special K cereal
- Leftover kugel
- 2 random Smart Ones meals
- Office Lunch on Friday
- Leftover pasta
- Grilled cheese
- Rice and Veggies
- Leftover beef tips
- Frozen pizza
I forsee me needing a pretty decent sized restocking grocery trip after this week. I didn’t go last week nor do I have time to go this week (until at least Friday). But that’s a plus to having a pretty decently stocked pantry at all times; when I can’t go to the store and Devon also can’t, we don’t have to resort to takeout constantly or starve. There will be some foraging this week, but it’ll work.
Now, let’s do better next week.
