Meal Plan Monday #7

Remember how I said this coming week was going to be crazy?

Yeah. It is.  

I feel like meal planning this week is cheating because I’m “eating out” pretty much every day for one reason or another.  Mind you, eating out doesn’t mean I’m stopping at the local fast food chain each day.  Actually, none of it will be fast food-esque.  

This week is graduation week, which means there are a lot of events for our seniors where there is food provided and since I am the senior counselor, I will be at all events.  

Monday is our Senior Alumni Brunch, where our seniors are “inducted” into our alumni association.  It’s a huge brunch given by our alumni coordinator to welcome them into their new “positions” before we all go to graduation rehearsal.  Tuesday is Senior Dinner, where the seniors and their families come to one last dinner at school as a senior class.  Then Friday, our school is doing our end-of-the-year faculty luncheon at a local Mexican place after the graduation ceremony.  

On top of all of that, my department is having two working lunches; one on Tuesday and one on Thursday.  And I’m part of an administration working lunch on Wednesday while we plan our summer program.  

So, basically, every day, I have at least one meal “out”, and Tuesday, I actually have two thanks to the department lunch and senior dinner.  

Basically, I planned snacks and breakfasts this week.  There’s plenty of leftovers in the fridge for the couple of lunches I need to deal with and the few dinners I have to worry about.  

This was Devon’s weekend to cook and I told him he’s pretty much on his own dinner-wise this week, so he made some extra ribs (he makes delicious crock pot BBQ ribs) and a couple extra chicken thighs for himself this week for when I’m not home or not hungry.  

With everything going on, my week pretty much looks like this:

Breakfasts:

  • Bananas
  • Yogurt
  • Senior Brunch
  • Special K

Lunches:

  • Leftover Spaghetti Supreme Pasta Salad
  • Department Lunch x2
  • Summer Planning Lunch
  • End of the Year Faculty Lunch aat Zen West

Dinners:

  • Leftovers
  • Senior Dinner
  • Grilled Cheese
  • Rice/Veggies
  • Salad

Snacks:

  • Cheez-its
  • Graham Crackers
  • Cucumbers
  • Peppers
  • Boom Chicka Pop

Given how busy this week will be, its nice to not really have to make a lot.  Next week there should be some semblence of normalcy back, though.  That is if I haven’t lost the rest of my danity by then.
