  1. Heat oven to 425F. Combine all Chicken Dry Rub ingredients in a bowl and sprinkle/rub the mixture all over the tenderloins. Arrange chicken on a sheet tray/baking sheet and bake for 25 minutes or until internal temperature reads 165F.
  2. While the chicken is cooking, prepare the grain of your choice according to package directions or your own directions. I typically make white rice, so the rice is done around the same time the chicken is.
  3. While your rice and chicken are cooking, drain/rinse the corn and beans and chop your red onion.
  4. Once the chicken is cooked, allow it to cool for a few minutes, then chop/shred chicken to your preference. Once chopped/shredded, coat chicken in BBQ sauce before serving/storing (if this is meal prep, you can delay this step until you are ready to actually eat, if you would like)
  5. Assemble bowls for immediate deliciousness or meal prep (if you would like, or you can store the components separately and build the bowls when you are ready to eat – which is my preference).
