Meal Plan Monday #3

Adding in a deliberate take out night to my meal plan last week made me feel a bit better about ordering in from our favorite Italian place Tuesday night.  Not that I felt horrible eating delicious baked pasta goodness, but it kept me to the plan I made.  And it gave me another night of leftovers because there is no way I can eat all they give in one sitting.

The only other change to my plan was getting an unexpected catered lunch on Thursday. One of my coworkers stuck her business card in a local Mexican chains jar when she was there and they drew her card to have a lunch catered at her office for 10 people.  Lucky for me, I got to be one of the ten people, so I got to nom on delicious Mexican for lunch.

My Italian Chopped Salads were a huge hit for me, too.  Again, something so easy to take with me every morning and they were still crunchy and fresh in the mason jars by Friday.

So, this week is a little wonky.  Devon is off on Tuesday because of the MD Primary Elections (private schools aren’t effected, so we aren’t closed) and I’m off on Friday because it’s our school’s prom that evening.  Perk of a private school is that we get the day off for prom.  No one complains.  There’s also a couple of school events going on that are making my lunch times kind of weird (you know the times I might actually eat).  Because of that, I’m not 100% sure of all dinners this week, but I do have a little bit of a laid out plan.  I did make lunches easy, though.  Between an awesome cartwheel deal at Target and a coupon, I got a few Smart Ones frozen entrees to just grab in the morning for lunch. I know they aren’t everyone’s cup of tea, but they’re easy, super affordable because of the sale and they can be ready pretty quickly.

For this week, we have:

Breakfasts: (I haven’t really been eating breakfast lately for some reason, so this is pretty slim this week)

  • Banana
  • Yogurt

Lunches:

  • Smart Ones entrees
  • Lunch out on Friday
  • Extra mason jar salad

Dinners:

  • Rice and Veggies (I usually do this once a week, I just take a bag of the Steamfresh Flavorful veggies and put the bag over a bed of white rice.  It’s super good and easy.)
  • Leftovers
  • Mac/Cheese
  • Loaded Baked Potatoes w/veggies
  • Cheese Quesadillas
  • Devon – Tuesday dinner?
  • Takeout

Snacks:

  • Boom Chicka Pop (I’ve become addicted to the White Cheddar variety)
  • Cucumbers
  • Whole Grain Tostitos and Salsa (had a craving)
  • Strawberry cupcakes

I made this week a little less prep-heavy because, like I said, it’s a crazy week.  Most stuff I’ll have is prepared/frozen already so I just either have to warm it through on the stove/in the oven or throw in the microwave for a few minutes.  I’m not always the biggest fan of weeks like that, but at least having it all written down and planned out, I’ll still eat at home instead of stopping at the takeout places too often this week.  I know I’ll be out all day on Friday (I have adventures planned) so I’m planning on grabbing lunch while I’m….adventuring but I factored that into my plan so I’m not too mad about it.

I’m enjoying planning this all out.  It’s keeping me accountable and more likely to eat at home.  It’s funny, I bought a pair of jeans a few weeks ago that fit perfectly when I bought them, but were falling off of me when I wore them to work the other day.  Sure it could have been bloating (or lack thereof) but I like to think it’s because I’m eating out less and focusing on eating better.

Either way I’m not mad about it.
